Apple CAF is a macOS container that holds uncompressed or losslessly encoded audio. Convertessa re-encodes that audio as AC-3 (Dolby Digital), the format expected by Blu-ray discs, broadcast pipelines, and surround-sound workflows. Because AC-3 is lossy, you can set the output quality before converting.

Yes. AC-3 (Dolby Digital) supports up to 5.1 channels. Convertessa preserves the channel layout present in your source CAF file during encoding.
AC-3 is a lossy format, so some quality is traded for a smaller file. You can control the tradeoff by setting quality in step 2 before you convert.
