Because AC-3 is a lossy codec, you can set the quality level before converting to balance file size against fidelity. Everything runs on your Mac; no file is ever uploaded or sent to a server.

No. Converting to AC-3 produces an audio-only file. The video track is discarded because the AC-3 container carries audio only.
Yes. Drop the folder onto Convertessa or run convertessa *.mp4 --to ac3 in the terminal. Every MP4 in the folder is queued and converted in one batch.
