WebM is a web-native container carrying video and audio tracks. Converting to AU extracts the audio stream and writes it as a Sun AU file — an uncompressed PCM format used by legacy audio tools and the Java Sound API. The entire process runs on your Mac; no file is uploaded anywhere.
