Yes. Convertessa removes embedded metadata from the output file, so device information and tags from the original 3GP container do not carry over.
The quality slider controls the Ogg Vorbis encoder's target quality level. Higher values preserve more audio detail and produce larger files; lower values produce smaller files with reduced fidelity. The setting is available before you click Convert.
Yes. Drop a folder onto Convertessa and it converts every 3GP file inside in one batch. From the command line, run convertessa ./folder --to ogg to do the same.
