Yes. Monkey's Audio is lossless; AC-3 is a lossy codec, so some audio data is discarded during encoding. Set quality higher to minimize the difference, and keep your .ape files as the archival copy.
Yes. Drop a folder onto Convertessa or run convertessa ./folder --to ac3. Every .ape file in the folder is converted in one pass.
Yes. Convertessa runs entirely offline. No file is uploaded to a server or cloud service — the conversion happens on your Mac only.
